It can be frustrating at times trying to feed your children. Some may be picky while others just don’t want to try new foods. But you don’t have to worry anymore because we have recipes you kids will adore. In our last blog we covered four of these eight terrific recipes that will have your kids asking for more. So let’s take a look at the last four easy dinner recipes.

Cheez-It Meatloaf (Serves 4)

Ingredients:

  • 1 package of onion soup mix
  • 2 eggs, large
  • 1 c. of crushed Cheez-It crackers
  • 2 lbs. of 85 % lean ground beef
  • ¼ c. of sharp cheddar cheese, shredded

Directions:

Preheat your oven to 350˚ F.

Put the eggs, onion soup mix, crushed crackers and ground beef in a large bowl. With your hands, mix everything together until completely blended.

Lightly coat a loaf pan with cooking spray and then put the mixture evenly in the pan. Bake for 40 minutes or until the beef has moved away from the sides of the pan and it’s brown. Sprinkle the cheddar cheese on top then broil for 5 minutes or until the cheese has melted.

Cauliflower Cheese Nuggets (Serves 4)

Ingredients:

  • 1 c. of breadcrumbs
  • 1 egg, medium size
  • ½ tsp. of mixed herbs
  • 1 c. of cheddar cheese, grated
  • ½ c. of grated Parmesan cheese
  • ¼ tsp. of garlic powder
  • 2 c. of cauliflower, cooked

Directions:

Cover a baking sheet with parchment paper and preheat your oven to 400˚ F.

Cut the cooked cauliflower into pieces and put it in your food processor; pulse until the cauliflower’s in small chunks. Then add in the egg, mixed herbs, cheddar cheese, Parmesan cheese and garlic powder; pulse until everything is blended. Don’t over-pulse.

Pour the mixture in a large bowl, add the breadcrumbs and mix until all is combined.

With your hands create 12 disks and place them on the lined baking sheet.

Bake until the nuggets are golden brown, about 12-14 minutes. Remove the baking sheet from the oven and let them sit for 5 minutes; cooling will allow them to retain their round shape.

Plate and serve with your child’s favorite sauce if desired.

Cool Ranch Chicken Strips (Serves 2)

Ingredients:

  • 2 eggs, beaten in a shallow bowl
  • ¼ tsp. each of salt and black pepper
  • 2 c. of flour
  • 1 bag of Cool Ranch Doritos, regular size
  • 1 lb. of skinless, boneless chicken breasts

Directions:

Preheat your oven to 350˚ F.

Fill up your food processor (or blender) with Doritos, cover with the lid and pulse until you have a fine powder. Pour the Doritos dust in a shallow bowl when you have 1½ cups.

In another shallow bowl blend salt, pepper and flour.

Now line up the three bowls beside each other: flour, eggs and Doritos then place a baking sheet lined with parchment paper next to the Doritos bowl.

Slice the chicken into 1- or 2- inch strips and dunk each strip into the flour, egg then Doritos bowl; be sure to shake each strip after dipping into the flour and egg bowls. Put the strips on the baking sheet about 1 inch apart.

Bake the chicken strips until the juice is clear when you poke them with a fork, 30-35 minutes.

Tater-Tot Grilled Cheese (Serves 1)

Ingredients:

  • ½ c. of cheddar cheese, shredded
  • 12 defrosted tater-tots

Directions:

Lightly grease a large skillet with cooking spray and heat to medium heat.

On one side of the pan, place 6 tater-tots side by side to form a rectangle. Repeat this process to create another rectangle on the opposite side of the pan.

Using a large, metal spatula, create a square, flat patty by pressing down on the tater-tot rectangles; be sure to press hard and do so several times if need be to make them stick together.

Fry for about 3-5 minutes or until the tater-tots start to get crispy on the bottom sides. Scatter the cheddar cheese on top of each square, cover the skillet with its lid and cook until the cheese has melted.

To create a sandwich, flip a tater-tot square onto the other square using the spatula; press down and cook for 3 more minutes, until each side of the sandwich is crispy and golden. Allow to cool for 3-5 minutes; this will help the sandwich keep its shape.

Creating these recipes together will provide your tykes with some awesome cooking and math skills. Plus, this time together will strengthen the bond between you—what could be better than that?
